January is the perfect time for fresh starts - though let's be real, the only thing I’m really starting is my 17th cup of coffee! But hey, we’re embracing it the Nordic way. After the holiday chaos, it's time to reset, find balance, and maybe remember what routine feels like again. It’s been a cold, but beautiful start to the year. We’re soaking up all the vitamin D we can from the winter sun during our walks (with a little backup from supplements). Indoors, we’re keeping warm in woollen socks and surrounded by the soft glow of candles, as we slowly ease back into the rhythm of life.
With the kids back at school, it’s also the perfect moment to return to "normal" eating and exercising after the holiday indulgence. But let’s not dive into extreme diets or turn our kitchens into juice cleanse factories. Instead, we’re embracing the Nordic way: balance and sustainability. It’s not about going from zero to kale in one day - it’s about small, lasting changes that’ll nurture a healthier, more vibrant you... with minimal drama.
So, while everyone else rushes to overhauls, we’re quietly focusing on steady habits that align with our values - and maybe enjoying a few extra cinnamon buns along the way. January isn’t about pushing yourself to the brink of exhaustion - it’s about savouring the small moments, the little things that make long-term well-being feel like a cozy, achievable dream.
How are you embracing the new year? Whether it’s a walk in the winter sun (and by "winter sun," I mean "that one sliver of light that briefly appears before disappearing"), a comforting homemade treat, or simply slowing down to enjoy the simple pleasures, the Nordic way reminds us that wellness is a journey, not a race. So why not make that journey a little sweeter - and definitely more delicious - by baking some Korvapuusti?
Korvapuusti, the beloved Finnish cinnamon bun, is the perfect blend of warmth, spice, and comfort. Soft, pillowy dough, a rich cinnamon filling, and a sweet glaze that’s basically a warm hug for your taste buds. Freshly baked and shared with loved ones (or devoured secretly while everyone’s still asleep), Korvapuusti isn’t just a pastry - it’s a comforting ritual that embodies the essence of hygge and the simple pleasures of life. So, go ahead - enjoy the warmth and joy of Korvapuusti in your own home and let it transport you to the heart of Scandinavia..
Ingredients:
5 dl milk
50g yeast
2 eggs
2 dl sugar
2 tsp salt
1 tbsp cardamom
16 dl strong bread flour
1½ dl butter (melted)
Instructions:
Crumble the yeast into lukewarm milk. Stir. Add the eggs, sugar, salt, cardamom, and some of the flour. Mix the dough until smooth.
Gradually add the rest of the flour, followed by the melted butter. Let the dough rise under a cloth in a draft-free place until it has doubled in size.
Roll the dough into a large rectangle. Spread a thin layer of softened butter over the surface, then sprinkle with a sweet cinnamon-sugar mix. Carefully roll the dough into a tight log and cut into your desired shape.
Place the buns on baking paper, let them rise, then brush with egg wash. Bake at 200°C for about 10 minutes or until golden and tempting enough to make you forget all your New Year’s resolutions.
Enjoy!
